The forward speed quickly separates skins and seeds so you're left with just the puree. The reverse speed helps to prevent jamming. The tomato strainer comes with a 1.5mm multipurpose screen for tomatoes and berries, a 3mm screen for pureeing larger vegetables like pumpkins and squash, and a 6mm screen for making chunky salsas and purees.
